Dictionary, translator, calculator, calendar, wi-fi status. The first three as just quick-and-dirty tools... the latter two because it's far easier to flick the mouse to the upper-left-hand corner to zip up the dashboard a moment than it is to check a month-block calendar and wifi meter with other apps.
I don't use spotlight except on rare occasions. Quicksilver, though? Ooooh yeah. Rocks my world.
